Recipe: Series 2, 1 of 7 - Banana Bread
Or as this deliciously wicked cookbook calls it: A Good Book, a Glass of Milk, and Thou Banana Bread. You can just tell by the title that it is going to be good and boy it is. I must admit to having a small nibble of a slice as I had never made this before. Well cook has to do a quality check now doesn't she ;)
The book: "I want chocolate cake and I want it now. The 'Who needs him anyway' cookbook" is fabulous and should be part of everyone's cookbook shelf. It is marvellously tongue-in-cheek and has some fab, cheap, easy and quick recipies to boot.
Ingredients:
225g / 8oz plain flour
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1/4 teaspoon of salt
115g/4oz unsalted butter, softenend
170g/6oz granulated sugar
2 large eggs, at room temperature
2 large bananas, mashed (slighly brown speckled right through to 'need to be eaten with a spoon', unripe green ones will not work well)
3 tablespoons milk
2 teaspoons vanilla essence
55g/2oz chopped walnuts/pecans (optional)
Preheat the ove nto 180C / 350F / Gas Mark 4.
Lighlyt grease a loaf tin (approx 22 x 11 x 6cm)
In a large bowl stir together the flour, baking powder, bicarbonate of soda and salt.
In another bowl using an electric whisk, cream together the butter and sugar until it is very well blended and has turned pale.
One at a time add the eggs, beating well after each addition.
Add the bananas, milk and vanilla essence and stir until junts combined. (The mixtue may look a little curdled at this stage, it is fine.)
Stir in the nuts, if using.
Scrape the mixture into the loaf tin and spread evenly. Bake for about 45 minutes or until a skewer inserted into the middle of the bread comes out clean and the bread is slightly browned.
Remove the tin to a wire rack and allow to stand for 10 minutes. Remove from the tin and allo to cool on the rack.
Store in an airtight container. (If you don't eat it all at one sitting!)
